    But you can't get one.

    Splinter , deep fried turkey is a long-time popular dish in Louisiana, where cooks are smart enough not to do this frying in the kitchen, as the hot oil often ignites. Experienced cooks set up the big oil cookers far from the house, usually on their driveways.

    Not-so-experienced cooks sometimes set up their gear in the garage, sometimes to disastrous results.
    This is how Drew Goins started his WaPo newsletter on Wednesday:
    “It’s the day before Thanksgiving, so I’ll keep this as brief as a deep-fried turkey inferno that firefighters manage to contain to the free-standing garage.”

    It is possible that I am dating myself, but I believe the majority of the USA Thanksgiving turkeys have been frozen. The rules for buying a “fresh” turkey at some butcher or supermarket means that it has been thawed once from its original -3 Celsius. Probably killed that same week. Below that temperature are called frozen and slaughtered months earlier. There are similar yet smaller frozen Pavitas available year round at Argentina supermarkets which can be used to celebrate the holiday. https://api.cotodigital.com.ar/sitios/cdigi/p…62-00047462-200.

    In the USA the few lucky who are willing to place an order some months before, and at the premium price, will get a real fresh turkey killed the days before. I am fairly confident that such a thing does not exist in Argentina unless you know the farmer.

    Call me crazy. I’ve had fresh turkey, but can’t say I find the taste any different from frozen.

    And yes, Pavo definitely is available here in BsAs. Before his death a few years ago, forum member TomAtAlki used to roast turkeys every year for the Thanksgiving party he and his wife NancyAtAlki had. The turkeys were always perfectly done, juicy, and delicious.

    The just slightly below 27 F degree turkeys are fresh, and healthily safe since they have been temporary frozen for only a few days. They are considered to be fresh by the USA regulators. Even these fresh turkeys are easier to cook to a nice crispy skin compared to frozen.

    The example is to inspect the granja pollos which here are dry enough to cook to an ideal crispy skin. Vs the more common thawed dripping wet chickens from the Argentina markets that are always disappointing.
